The reason is simple: extraction rate is determined primarily by surface area, which is determined by how finely the beans are ground. Get this wrong and you get sour, weak coffee (under-extracted) or bitter, harsh coffee (over-extracted), regardless of how good the beans are or how expensive your brewer is.

The Science Behind Grind Size
When you grind coffee, you're increasing surface area. More surface area means more contact between water and coffee, which means faster extraction.
